Fermentation

Carefully harvested, the grapes were pressed and cold settled, with 2-3 h skin contact to extract tropical flavours and aromas. The juice was transferred in 225 French oak barriques where it underwent fermentation and ageing on lees with regular yeast stirring for 5 months.

Fermentation

The grapes were picked at full ripeness, in the first decade of September and destemmed without crushing followed by 48 hours cold skin contact. Alcoholic fermentation occurs in stainless steel tanks at 24-25°C for 14 days. During the skin contact period, few times per day the juice is gently pumped over the skin to give the wine texture and color.

Oak aged in Romanian oak 225 lt barriques.

Fermentation

Following hand harvesting at full ripeness, during end of September /beginning of October, the grapes were destemmed and slightly crushed. Fermentation where conducted in stainless steel closed tank with gentle cap irrigator, at 26-29°C for 14 days. The wine has been drained directly in the barrels of 225 lt where the malolactic fermentation finished.

Fermentation

The 4 varieties have been separately vinified, alcoholic fermentation in stainless steel closed tanks with gentle cap irrigator for 14-21 days occurs in stainless steel tanks at 27-29°C, the juice was pumped over the skin 4 or 5 times per day for 10-15’. Free run juice and press juice undergo alcoholic and malolactic fermentation separately. The varieties go separately in new or second time used oak barriques for 12-18 months. The best barriques have been selected to create the blend.
